There’s a good argument to be made that José Andrés is the best chef in America right now. Although able to dazzle with cutting-edge molecular techniques honed in his years working at the side of Ferran Adrià at elBulli, Andrés’ creations can never be accused of being clinical or soulless, as his earthy takes on classic Spanish soul food attest. The Bazaar by José Andrés at the SLS is another home run for the chef who seems incapable of putting a foot wrong. Normally, the mention of Asian influenced tapas would have you worried. Not in the hands of Andrés who turns out small but perfectly formed plates of “Japanese tacos” – eel topped with pork chicharrón (deep fried crackling) – fish and dragon fruit ceviche, smoked oysters and coffee-rubbed beef. Set in an exuberant dining room by Philippe Starck, this is an escapist fantasy that might seem a little more real when you get the bill – but it is worth every penny.
