As the chef that essentially defined American fine dining throughout the 1990s, it’s heartening to see a veteran like Jean-Georges Vongerichten still opening restaurants of such high quality. A fear of decline stemming from the recent departure of head chef Brad Kilgore to open Alter, his much-anticipated place in Wynwood, seems to be unfounded; J&G Grill still combines classical French techniques with Asian flavours to superb effect. Starters like a seemingly standard salad of heart of palm and heirloom tomato are turned on their head with the addition of shaved young coconut. The caramelised beef tenderloin with heirloom carrots offers a similar experience – the sudden appearance of miso mustard adding a note that is simultaneously off-kilter and perfectly harmonised. When in doubt, just go for the famous black-truffle pizza.
