In recent years, Las Vegas has seen an explosion of superb off-Strip restaurants. Of particular note are several Japanese places that make legitimate claim to being better than anything on the Strip, at half the price. Hidden inside an unpromising strip mall in the middle of Las Vegas’ Chinatown, Kabuto Edomae Sushi offers set tasting menus consisting of the freshest fish, much of which is imported from Japan. With just 18 seats, you’ll need to book ahead. And remember: this place is for purists. The website even features a section titled “Items that will not be served”, just in case you were silly enough to think you could order a spicy tuna roll or something equally ubiquitous.
