Another José Andrés restaurant? Well, you can’t fault the man for being the best. And make no mistake: this is some of the tastiest meat you’ll ever eat. A twist on the tired Las Vegas steakhouse formula, Bazaar Meat is, to quote Andrés, a “celebration of the carnivorous, in all its forms”. These forms include: cotton-candy foie gras, Bison carpaccio, wild-boar sausage and a whole suckling pig. There are also the classic Vegas steakhouse favourites – Black Angus and Wagyu rib eyes the size of an elephant’s ear – but when you’re in the hands of a culinary alchemist like Andrés, you might as well go a little over the top.
