Don’t come to this microbrewery restaurant for burgers and pizzas. Bright Tank Brewing Co.’s owners, Gemma Sampson and Matt Moore, want to challenge the “greasy, stodgy beer food” status quo and chef Jake Gledhill has nailed the brief with bold cooking inspired by brewing.
Sourdough is baked using spent grain from the brewing process, mussels are steamed in saison and popcorn is seasoned with hop salt. Add house-brewed beers and you’re at a happy place for beer drinkers (and eaters).
