Level One’s evolution as a modern Asian restaurant has taken some time but now it seems almost complete under new chef Josh Kim, who has brought a decidedly Korean flavour to the mix.

After almost seven years working with various Merivale restaurants in Sydney, Kim has a giant wok of experience to draw on, exemplified in dishes such as grilled baby octopus with XO sauce and pickled snake bean and the succulent master-stock lamb ribs with black bean sauce. The housemade pork and prawn wontons with shio goma dressing and the Korean tong ho salad with jellyfish, coriander, enoki mushroom and wood-ear fungus should also be on your table. Service standards are particularly commendable here, along with well-spaced tables. Enjoy pre-dinner drinks in the grand downstairs bar.
