The Wild Rover
When a bar describes itself as “swashbuckling”, you know you’re in for a good night. The Wild Rover was founded by two travelling companions who’d opened another Sydney small bar, Grandma’s, two years earlier. Try a twist on a traditional cocktail with a Jamo Julip: Jameson Whiskey, falernum, peach bitters and mint. On Monday evenings the bar stages The Whiskey Co-Operative, where industry hosts share their knowledge of their favourite drop. Tastings are logged in your Whiskey Passport – once it’s complete, you’ll gain access to the Reserve Collection of rare, specialist drams sourced from around the world. The Baxter Inn
You may have to queue to get into this no-bookings whiskey den any night of the week but for good reason: it’s No. 12 on the list of the World’s 50 Best Bars. Make your way through the unmarked laneway and down the stairs and order your whiskey neat from the impressive selection displayed behind the bar. True connoisseurs should seek out the Whiskey Room, tucked away in the cellar, for the premium collection. If you want to move on from whiskey, there's a Jameson Caskmates cold-drip coffee. Don’t expect food – the fare is strictly pretzels only but they’re free.

Located in the Four Seasons Hotel Sydney, this is a perfect and convenient stop on your next trip to the Harbour City. No matter what you prefer, the staff are more than happy to guide you through their 240-strong whiskey selection. Each week there’s a different whiskey flight on offer with four different types to help expand your palate. The flight is $30 on Monday so start your week right with some new drinks and perhaps a plate of smoky pork ribs with chilli, soy and peanuts.

Shady Pines Saloon
Brought to you by The Baxter Inn crew, the hard-to-find Shady Pines is the Sydney destination for Wild West charm, complete with cow hides and taxidermy. You’re likely to hear country music as you enjoy your whiskey on the rocks but there’s also live music on Sundays from 6pm to 9pm (check the Facebook page for upcoming shows). The saloon opens at 4pm for that cheeky after-work whiskey – perfect to wash down the bottomless bowls of free peanuts.

Della Hyde
Sit back and imagine you’re in a classic hotel lobby bar on your visit to Della Hyde. Whether your whiskey of choice is, there’s a range of options for your next glass in the “Hard Stuff” section of the menu. Pair your tipple with a cheap and delicious snack (dumplings are a dollar on Tuesdays and chicken wings are the same price on Wednesdays) or go for a cheese toastie to ease those late-night cravings.
