Home to Australia's most famous city, Sydney, and the equally famous Bondi Beach, New South Wales has a lot more to explore than just these two sparkling gems. Look out for the original sandstone buildings and gracious old pubs speckled throughout the small country towns. There's action and adventure to be had whether it's surfing the shoreline or hitting the slopes in the Snowy Mountains, not forgetting canyoning, bushwalking, cycling, whale watching and more. Foodies can get their fix in the heart of the cities or head out to the vineyards for a cheese and wine bonanza. Or if all that sounds too stressful, head to the coastal retreat of Byron Bay or somewhere similar, sit back and simply enjoy the warm hospitality of the locals.
